Instructions

  • Preheat your oven to 375°F (190°C).
  • Place the pie crust in a 9-inch pie dish and prick the bottom with a fork.
  • In a skillet over medium heat, sauté minced garlic until fragrant (about 1 minute).
  • Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
  • In a large mixing bowl, whisk together eggs, half-and-half, salt, black pepper, and red pepper flakes if using.
  • Stir in the spinach, artichoke hearts, mozzarella, and Parmesan cheeses.
  • Pour the mixture into the prepared pie crust.
  • Bake in the preheated oven for 35-40 minutes or until the quiche is set and golden on top.
  • Let cool for 5-10 minutes before slicing and serving.
