Instructions
Pat brisket dry and season with salt and pepper.
Heat olive oil in a pan and lightly sear brisket on both sides (optional but recommended).
Place onion and garlic in the bottom of the slow cooker.
Set brisket on top and add beef broth and tomato paste.
Cover and cook on LOW for 8–10 hours until fork-tender.
Let rest, then slice against the grain and spoon juices over the top.
Serve warm with your favorite comfort sides.
