  • 1.5 cups all-purpose flour
  • 0.5 cups sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 tablespoon poppy seeds
  • 0.5 cups milk
  • 0.25 cups vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 unit zest of 1 lemon
  • 2 tablespoons lemon juice

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.
  • In another bowl, mix together the milk, vegetable oil, egg, vanilla extract, lemon zest, and lemon juice.
  • Pour the wet ingredients into the dry ones and gently stir until just combined.
  • Divide the batter into the muffin tin, filling each cup about 2/3 full.
  • Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
  • Once they cool, drizzle with a lemon glaze made from powdered sugar and lemon juice if desired.
