Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.
In another bowl, mix together the milk, vegetable oil, egg, vanilla extract, lemon zest, and lemon juice.
Pour the wet ingredients into the dry ones and gently stir until just combined.
Divide the batter into the muffin tin, filling each cup about 2/3 full.
Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
Once they cool, drizzle with a lemon glaze made from powdered sugar and lemon juice if desired.
