Ingredients

Chicken

  • 1.5 lbs boneless skinless chicken breasts or thighs

Sauce

  • 3 tablespoons honey
  • Juice of 2 fresh limes
  • 3 garlic cloves minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • A handful fresh cilantro chopped (optional)

Instructions

  • Prep your ingredients: gather chicken, honey, fresh lime juice, minced garlic, olive oil, salt, pepper, and red pepper flakes if using. Chop cilantro and set aside.
  • Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and warm until shimmering but not smoking.
  • Season chicken pieces with salt and pepper on both sides. Place in hot skillet without crowding. Cook 3-4 minutes per side until golden brown and cooked through (internal temperature 165°F).
  • Push chicken to one side of the pan. Add remaining 1 tablespoon olive oil and minced garlic to empty side. Sauté garlic about 30 seconds until fragrant.
  • Add honey, lime juice, and red pepper flakes. Stir gently and let sauce bubble and thicken for about 2 minutes.
  • Spoon sauce over chicken, turning to coat evenly. If sauce is too thin, simmer a bit longer but watch to avoid burning.
  • Transfer chicken to plates, drizzle extra sauce on top, and sprinkle with fresh cilantro. Serve immediately.
