Instructions

  • Add the boiling water to a medium bowl, then pour in the sugar-free Jell-O mix. Whisk well until the powder completely dissolves.
  • Transfer about half of the yogurt to the bowl, whisking gently until it’s fully incorporated.
  • Add the remaining Greek yogurt to the bowl and whisk until smooth and lump-free.
  • If desired, stir in ½ teaspoon of vanilla extract.
  • Either cover the bowl tightly or pour into 2 separate bowls (or parfait glasses) and cover with plastic wrap.
  • Chill in the refrigerator for 1-2 hours or until completely set.
  • Serve and enjoy! Add a dollop of whipped cream, fresh fruit, or orange zest if desired.
