Instructions

  • Finely grate 1 cup carrots. Microwave them for about 1 minute to soften slightly. Let cool 5 minutes.
  • Add 1 cup rolled oats and ½ cup walnuts to a food processor. Pulse until crumbly. Keeping some texture makes the bites taste better.
  • Add 8 Medjool dates (pitted), ¼ cup raisins, 1 teaspoon cinnamon, ½ teaspoon vanilla extract, ½ teaspoon ground ginger, and 1 pinch salt. Blend until the mixture sticks together when pressed. If dry, add 1 teaspoon water at a time.
  • Scoop the mixture with a spoon and roll it between your hands to make small balls. You can roll them in shredded coconut if you like. Place the balls on a plate or tray and chill for 20 minutes to firm up. Serve as they are or with a creamy Greek yogurt dip.
