
Prep your ingredients: gather chicken, honey, fresh lime juice, minced garlic, olive oil, salt, pepper, and red pepper flakes if using. Chop cilantro and set aside.
Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and warm until shimmering but not smoking.
Season chicken pieces with salt and pepper on both sides. Place in hot skillet without crowding. Cook 3-4 minutes per side until golden brown and cooked through (internal temperature 165°F).
Push chicken to one side of the pan. Add remaining 1 tablespoon olive oil and minced garlic to empty side. Sauté garlic about 30 seconds until fragrant.
Add honey, lime juice, and red pepper flakes. Stir gently and let sauce bubble and thicken for about 2 minutes.
Spoon sauce over chicken, turning to coat evenly. If sauce is too thin, simmer a bit longer but watch to avoid burning.
Transfer chicken to plates, drizzle extra sauce on top, and sprinkle with fresh cilantro. Serve immediately.
