Ingredients:
- 3 large lemons
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1 tablespoon cornstarch
- A pinch of salt
Directions:
- Grate the zest from the lemons and set it aside.
- Squeeze the juice from the lemons, straining out the seeds and pulp. You’ll need about 1/2 cup of lemon juice.
- In a heatproof bowl, whisk together the lemon zest, lemon juice, granulated sugar, melted butter, and eggs.
- Place the bowl over a pot of simmering water (double boiler) and whisk constantly until the mixture thickens, about 10-15 minutes.
- In a separate small bowl, mix the cornstarch and a pinch of salt with a little water to form a slurry.
- Whisk the cornstarch slurry into the lemon mixture and continue to cook for an additional 2 minutes until the mixture is thick enough to coat the back of a spoon.
