Ingredients:
- 4 large, firm baking apples (such as Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1/4 cup chopped nuts (such as walnuts or pecans)
- 1/4 cup currants or raisins
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon vanilla extract
- 1/2 cup water
- 1/4 cup butter
Directions:
- Preheat your oven to 375°F (190°C).
- Wash and core the apples, leaving the bottom intact. Use a knife or apple corer to remove the seeds and create a well in the center.
- In a mixing bowl, combine the brown sugar, chopped nuts, currants or raisins, cinnamon, nutmeg, allspice, and vanilla extract.
- Stuff each apple with this mixture and place them in a baking dish.
- In a small saucepan, heat the water and butter until the butter is melted. Pour this mixture over the apples.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and continue baking for another 20-30 minutes or until the apples are tender and the tops are lightly browned.
- Serve the baked apples warm, spooning the syrup from the bottom of the pan over the top.
